Self-Serve Stations are Coming Back

However, as COVID-19 cases continue to decline, businesses are beginning to reopen and adapt their operations to ensure safety for both employees and customers. Below are some of the CDC's recommendations for managing self-serve stations in your foodservice business: • Mandate that all diners wear masks covering their noses and mouths while they serve themselves. • Place unpackaged food items behind barriers like sneeze guards and minimize direct hand contact with utensils or dispensers by offering deli/wax papers, disposable gloves, and/or single-use serving utensils that are discarded after each use. • Promote maintaining a distance of at least six feet between diners and staff in high-traffic areas such as lines or near dirty dish returns. Visual aids like floor markers or wall signs can help enforce this. • Avoid allowing customers to take items directly from refrigerated units; instead, pre-package everything so guests don't need to touch doors. • Refrain from reusing or sharing items that are hard to clean effectively, like paper menus. • If shared objects must be used, replace them frequently—every 15 minutes if possible—and make sure they're easy to sanitize. • Install no-touch or foot pedal trash bins. • Consider having staff monitor the station to ensure proper behavior and address any issues related to contamination or lack of social distancing.
