Over the past year, many foodservice providers had to halt their self-serve offerings due to safety concerns. However, as infection rates continue to decline, these services are making a cautious comeback. By implementing a few operational changes, foodservice operators can ensure safety while still providing convenience to customers. Here are some key recommendations from the CDC regarding the use of self-serve stations: • Mandate that customers wear masks when serving themselves. • Place unpackaged foods behind barriers like sneeze guards. Reduce direct hand contact by offering disposable gloves, deli papers, or one-time-use utensils. • Encourage social distancing by marking floors or walls with guides or signs. Maintain a distance of at least six feet wherever possible. • Avoid allowing customers to access items directly from refrigerators or cabinets. Instead, offer pre-packaged items that can be picked up without touching surfaces. • Refrain from reusing or sharing hard-to-clean items like menus. • Replace shared utensils frequently—every 15 minutes if necessary—and ensure they are easy to clean. • Install touchless or foot-operated trash bins. • Consider assigning staff to oversee these stations, ensuring proper behavior and addressing any issues promptly.
